Travel to the cellar

The visit of the winery and its underground cisterns is a journey through the evolution of viticulture in our territory, the history of bulk wine ships that were loaded daily, the barrels room of modern Primitivi, the tasting of our wines narrated with small gastronomic diversions.

If, as we believe, you should be passionate or wanted for once to play the role of a real “maitre de cave”, we have two variants that require not only your participation but also your commitment: the first among the oak barrels, the second among the bottles of our metodo classico sparkling wine.

We offer two different “frames” of our territory: the first is a wider one, for those who want a general vision of wine production in terms of vines, techniques and varieties of wines.

The second one proposes a detailed focus on the Primitivo di Manduria, with a unique cross reference to overseas experiences.

Time Preview

During the visit in the barrels room, you will participate with one of our experts in the collection and tasting of two Primitivi from different barrels. While commenting on them, you will be explained the importance and variety of woods for wine aging, the evolutionary profile of Primitivo, the evaluation of the perspective of the tasted samples.

Spatial bubbles

During the visit to the magnums bottle racks, we will explain the idea and the production of the sparkling wine Edmond Dantès, describing the traditional production technique. At the end, one of the participants will be guided to carry out the ancient manual operation of the “sboccatura” of an aging bottle. Who makes the video will toast first!

By commenting on them, the importance and variety of woods for the aging of wine, the evolutionary profile of primitivo, the prospective evaluations of the samples tasted will be explained to you.
